One-Year Cheddar: Comforting, creamy flavor, yet enough personality to
stand up to Cheddar twice its age. Medium intensity with sweet, butter
flavors.
Two-Year Cheddar: This bold Cheddar, winner of more than a dozen
prestigious awards, offers tangy, lactic notes, hints of brown butter, and
finishes on a clean, nutty note.
Smoked Maple Cheddar: This raw-milk Cheddar is cold-smoked over
smoldering maple wood chips for up to 4 hours, a method that transforms
this 100-day Cheddar into a smooth, subtle, and flavorful delicacy.
Smoked Chili Cheddar: This Chili Cheddar is a rich cheese big on flavor,
which is intensified by the addition of habanero, jalapeno, and pasilla
peppers, resulting in just the right balance of chili flavor and spice. The
Cheddar is then cold smoked over maple embers for up to 4 hours, adding a
woodsy depth to balance its bright, spicy flavors.
Truffle Cheddar: A truffle lover’s dream, this mild Cheddar is enhanced with
the heady, earthy notes of truffles. Grafton Village Cheese adds both truffles
and truffle oils to attain a satisfying marriage of sweet, buttery notes and
heady, musky, earthy flavors.
